How to Get a Last-Minute Restaurant Reservation in Paris

Last-minute tables in Paris exist; they are simply not online. Cancellations fall in two windows — late morning and around 17:00–18:30 — and are given to whoever calls at that moment, politely, in French. Why the app says 'complet' when the room is not

Most serious Paris restaurants release only part of their seats to booking platforms and keep the rest for the telephone, regulars and the house. Platforms therefore show what is left of an allocation, not the room. A restaurant that is 'fully booked' online often has a two-top at 21:30 for the person who calls at 17:45 — the hour at which the evening's cancellations have been counted.

The two windows that matter

  • Late morning (11:00–12:30) — guests cancel the evening's plans once their day takes shape; the restaurant reorganises the book before lunch service.
  • Late afternoon (17:00–18:30) — the last confirmations are chased by the restaurant itself; unanswered reservations are released.

Give a precise party size and a flexible hour. Ask to be called back if something frees up; many restaurants keep an informal waiting list that never appears online.

Prepare a plan B of equal standing before you start, so that the evening never depends on one answer. Knowing the second-best address in the same neighbourhood is half the work.
